Costa Vida started in 2003 in Layton Utah. Inspired by the beaches in California, the founders were JD and Sarah Gardner. They wanted to offer a menu of fresh, made-from-scratch Mexican food. Steve and Patricia Stanley founded Café Rio in 1997 in St. George, Utah. They have many of the same foods and ideas as Costa Vida, and many think they are very similar restaurants. They are some of the most well-known fast Mexican grill chains in the United States. They share a similar menu, but there are some differences between the two.
Many people speculate that Costa Vida was out for Café Rio, and they wanted to be their competitor.
